Sweet Corn with Maple-Bourbon Brown Butter and Bacon

This is one of those truely aazng side dishes that you will make over and over!!


Ingredients


4 slices maple bacon, chopped


3 TBS butter


3 ears sweet corn, kernels cut off (about 4 cups)


2 green onions


2 tsp bourbon


1-1/2 tsp real maple syrup


lots of salt and pepper


 


Directions


Add bacon to large skillet over medium heat.  Cook until crispy then remove to a paper towel to drain and set aside.


Melt butter in skillet, when it starts to foam begin to stir until it reaches a nice brown color.  Add sweet corn, green onions, bourbon, maple syrup and salt and pepper then turn the heat up slightly and toss to combine.  Saute for 7-8 minutes or until corn is tender.  Add bacon back in and adjust salt and pepper as needed.
