2 Delicata Squash
2 TBS Olive Oil
salt to taste
Preheat Oven to 425 degrees
Clean the Delicata Squash by running under warm water and scrubbing away the dirt.
Cut the squash in half length wise and scoop out the seeds wit a spoon. (Discard the seeds or toast in the oven like pumpkin seeds)
Slice the Squash in 1/2 inch segments, creating moon-like segments.
Arrange pieces on a baking sheet in a single layer and brush on olive oil. Too much oil will make them soggy.
Place in ovenand roast 10 minutes. Turn the pieces over and continue roasting 7-10 more minutes or until tender.
You can eat the peel on these squash or trim it off after cooking.
