Spaghetti Squash with Sauteed Spinach and Roma Tomatoes

Ingredients

1 Spaghetti Squash

1 Bunch Spinach

2-3 Roma Tomatoes

1 TBS Minced Garlic

1/2 small onion

4oz Feta Cheese

Olive Oil

Salt and Pepper to taste

Directions

Cooking the Spaghetti Squash follow direction on the How to Tab.

While the Spaghetti Squash cooks prepare vegetables.

Chop Spinach and dice Roma Tomatoes, Garlic and Onion

Sautee the vegetables in olive oil until tender and spinach is wilted.

When the Spaghetti Squash is tender rake it into a bowl.  Pour sauteed vegetables in with Spaghetti Squash and add 4 oz feta cheese.  Drizzle with Oilve OIl, season with salt and pepper and enjoy!!
