BBQ Chicken Sweet Potato Skins


4 Sweet Potatoes (long and narrow, not too fat)

¾ lb Boneless, Skinless Chicken Breasts, cut into large chunks (for quicker cooking)

2 Shallots, chopped

1 Tbsp Ghee (or Grass-Fed Butter)

8 slices Bacon, chopped

¾ cup Paleo BBQ Sauce

½ cup Frozen Spinach, thawed and drained

Olive Oil

Sea Salt, to taste

Fresh Ground Black Pepper, to taste

Just a few notes about how I change this just a little.

We always eat this as a meal with a side salad.

I use fresh spinach or kale and saute in olive oil with a little bit of garlic.

I don't make paleo BBQ sauce.  I use Sweet Baby Rays (is there any other??)
