1/2 C uncooked Brown Rice
1/2 C uncooked Wild Rice
2 TBS Olive Oil
1/2 C Diced Celery
1 small Onion Diced
1 TBS Minced Garlic
1/4 C Dried Cranberries
1/2 C Diced Apple
Salt, Pepper, Sage and Thyme
1/4 C Slivere Almonds (toasted, optional)
Cook Brown and Wild Rice in Chicken Broth according to package directions. (The Wild Rice will take about 45 minutes so make sure and use a Brown Rice that cooks the same amount of time)
While the rice is cooking saute Onion, Garlic and Celery in Olive Oil
When vegetables are almost tender season liberally with salt, pepper, sage and thyme to taste.
Once Rice is tender and the water is absorbed mix vegetables and rice together. Taste andseason according to taste.
Finally stir in cranberries, apple and almonds if using. Serve!!!
