
Ingredients
1 lb Parsnips
1 TBS Evoo
3/4 tsp Italian Seasoning
Salt
Directions
Preheat Oven to 400 degrees
Peel Parsnips and cut into 1" chunks. Toss with oil, herbs and salt. Spread out on rimmed baking sheet in a single layer. Roast stirring once or twice until tender in the center and browned in spots. 25-30 mins.
