Balsamic-Braised Red Cabbage and Onions

When we lived in Des Moines there was a restaurant within walking distance of our house called Jethro's BBQ.  They had been on Man vs Food on Food Network lots of times.  They had a Hot Coleslaw that was a braised Red Cabbage and it was wonderful.  This recipe is very similar.  Make sure and use good Balsamic Vinegar and I would add a little extra sugar to yur taste.  The final extra, a little hot sauce!!

Hope you enjoy!!

2 TBS vegetable oil

3/4 pound Red Cabbage, sliced thin (about 6 cups)

1 Med Red Onion, sliced thin

1/4 cup water

1/2 cup Balsamic Vinegar

1 TBS Sugar

In a large heavy skillet heat oil over moderate heat until hot but not smoking and cook cabbge and onion, stirring, 10 minutes or until tender.  Stir in water, vinegar, sugar, and salt and pepper to taste and simmer, stirring occasionally, until almost all liquid is evaporated and vegeables are tender, about 15 minutes.
